INGREDIENTS For a 500g portion
- 305g Veggò® - Aquafaba
- 100g sunflower oil
- 30 g vinegar
- 13 g sugar
- 10 g mustard
- a pinch of salt
- 8 g lemon juice
- a pinch of onion powder
- a pinch of parsley
- a pinch of chives
- a pinch of dill
PREPARATION METHOD
- Pour Veggò® – Aquafaba , water, vinegar, sugar, mustard, a pinch of salt and lemon juice into the mixer.
- Mix at medium speed until a smooth, shiny gel appears (no lumps).
- Gradually add the sunflower oil, increasing the speed and stopping once the sauce is smooth.
- Add herbs and spices, mix for a few seconds.
