INGREDIENTS For a 500g portion

  • 305g Veggò® - Aquafaba
  • 100g sunflower oil
  • 30 g vinegar
  • 13 g sugar
  • 10 g mustard
  • a pinch of salt
  • 8 g lemon juice
  • a pinch of onion powder
  • a pinch of parsley
  • a pinch of chives
  • a pinch of dill



  • Pour Veggò® – Aquafaba , water, vinegar, sugar, mustard, a pinch of salt and lemon juice into the mixer.
  • Mix at medium speed until a smooth, shiny gel appears (no lumps).
  • Gradually add the sunflower oil, increasing the speed and stopping once the sauce is smooth.
  • Add herbs and spices, mix for a few seconds.
