Mix the vanilla, salt, chopped chocolate and flours in a bowl. In another bowl, with the help of a fork, mash the bananas to a puree.
In a cup, mix the vegetable drink with the vinegar and set aside for a couple of minutes.
In the planetary mixer, whip Veggò® – Aquafaba with sugar for 10 minutes at maximum speed.
Pour the vegetable drink with the vinegar, sunflower oil, mashed bananas into the bowl with the flours and mix; gently incorporate, a little at a time, the whipped Veggò – Veggò® – Aquafaba with the help of a spatula and mix in with slow movements from the bottom upwards until the mixture is smooth and homogeneous.
Pour the mixture into the mold lined with baking paper and spread evenly. Decorate the surface with chopped chocolate. Bake in the oven at 180 °C for about 45 minutes.
TIPS & TRICKS
To obtain more firm and compact structure, cool down Veggò® - Aquafaba in the fridge and add 1 g of cream of tartar together with the other dry ingredients before whipping.
