INGREDIENTS
- 30 g wholemeal flour
- 10 g rapè coconut
- 60 g Greek yoghurt
- 1 grated orange peel
- 100 g orange juice
- 1 honey teaspoon
- 5 g cocoa
- 10 g coconut flour
- 70 g Veggò® - Aquafaba
- 2 g baking powder
PREPARATION METHOD
- Preheat oven to 175°C. In a bowl mix together flour, rapè coconut, baking powder, orange peel, honey and orange juice finally add also the greek yoghurt.
- Split the dough in two bowls. In the first one add sifted cocoa, in the second one add gradually coconut flour.
- Using a planetary mixer, whip Veggò® – Aquafaba for 10 min at the maximum speed.
- Split whipped Veggò® – Aquafaba and add it to the previously prepared compounds, add Veggò® – Aquafaba gently with movements from bottom to top , compounds should be smooth, homogeneous and without lumps.
- Pour two teaspoons of coconut dough and two teaspoons of cocoa dough in a mould (for each donuts). Put in preheat oven to 175°C for 15-20 min.
- Remove from hoven and let it cool down inside the mould positioned on a grid. Once cooled, remove it
gently from mould.
