MARSHMALLOW FLUFF CREAM

INGREDIENTS

  • 100g Veggò® Aquafaba
  • 200g icing sugar
  • 50 g glucose syrup
  • 5 ml orange blossom flavor
  • 5 ml lemon juice

PREPARATION METHOD

  • Pour Veggò® – Aquafaba , sugar, lemon juice and orange blossom flavor into a planetary and, using electric whisk for 10 minutes at maximum speed, whip the compound till stiff.
  • Meanwhile, melt the glucose syrup in a bain- marie. Once liquid, add it to the Veggò® – Aquafaba mixture and continue blending for a few seconds.
  • Pour into a jar; Serve on the top of bread or directly with a spoon.

TIPS & TRICKS

  • To obtain more firm and compact structure, cool down Veggò®- Aquafaba in the fridge and add it to the planetary mixer, together with the other ingredients and 4g of cream of tartar.
