ARTICHOKES FRITTA

INGREDIENTS

  • 4 tablespoons of Veggò® - Aquafaba
  • 75 ml water
  • 8 artichokes
  • q.s. extra virgin olive oil
  • 100 g of chickpea flour
  • 1 teaspoon of turmeric powder
  • 1 shallot
  • q.s. salt

PREPARATION METHOD

  • Clean the artichokes and put them in water and lemon. Fry the shallot, previously cleaned and chopped, in a frying pan with 2 tablespoons of extra virgin olive oil, add the artichokes cut into wedges and the salt, simmer for 5 minutes.
  • In the meantime, prepare a batter made with the chickpea flour, water, a teaspoon of turmeric and a pinch of salt and mix with a whisk.
  • In a planetary mixer, whip the Veggò® – Aquafaba for 10 min. at maximum speed and gently mix it, with movements from the bottom to the top, into the previously prepared batter.
  • Pour the mixture into the pan with the artichokes, stir quickly and cook over a low flame.
