Clean the artichokes and put them in water and lemon. Fry the shallot, previously cleaned and chopped, in a frying pan with 2 tablespoons of extra virgin olive oil, add the artichokes cut into wedges and the salt, simmer for 5 minutes.
In the meantime, prepare a batter made with the chickpea flour, water, a teaspoon of turmeric and a pinch of salt and mix with a whisk.
In a planetary mixer, whip the Veggò® – Aquafaba for 10 min. at maximum speed and gently mix it, with movements from the bottom to the top, into the previously prepared batter.
Pour the mixture into the pan with the artichokes, stir quickly and cook over a low flame.
