  • 200 g 74% dark chocolate
  • 200g Veggò® - Aquafaba
  • a pinch of nutmeg
  • 5 g of apple cider vinegar
  • 100 g of sugar



  • Melt the chocolate in a bain-marie over low heat and stir. When the chocolate is partially melted, add the nutmeg and turn off the heat, while continuing to stir.
  • While the chocolate cools, pour the Veggò® – Aquafaba , apple cider vinegar and sugar into the planetary mixer and whisk for 10 min at maximum speed.
  • Pour the melted chocolate into a bowl and gently incorporate the Veggò® – Aquafaba , a little at a time, stirring with movements from the bottom to the top with the help of a spatula.
  • Pour the chocolate mousse into containers and let it rest in the refrigerator for at least 3 hours.


  •  To give your mousse an extra touch, serve it cold with the addition of vegetable whipped cream and chocolate chips or slivered almonds or fresh fruit.
