HAMBURGER BUNS

INGREDIENTS
- 10g fresh yeast
- 15g brown sugar
- 120ml vegetable soy drink
- 30 ml sunflower oil
- 100ml Veggò® - Aquafaba
- 6 g fine salt
- 400 g flour “Type 00”
- 5 g of sesame seeds
- 5 g of poppy seeds
REPARATION METHOD
- Dissolve the yeast and sugar in 100 ml warm water and mix.
- Place the mixture in a planetary mixer together with the soy milk, oil, Veggò® – Aquafaba and salt, mix for a few minutes, add the sifted flour and continue mixing at medium speed for about 10 minutes.
- Transfer the mixture to a glass bowl and cover with cling film and allow to rise for about an hour until the dough doubles in volume.
- Once risen, knead the dough gently by hand and divide it into 6 equal parts.
- On the work surface, with the help of flour, form small balls by turning the dough over on itself.
- Place the balls on a baking tray covered with baking paper and leave them to rise for another 20 minutes covered with a damp cloth.
- Preheat the oven to 190°C, brush the surfaces of the rolls with the liquid Veggò® – Aquafaba and scatter the poppy and sesame seeds.
- When the oven is hot, bake the rolls for about 15 minutes at 190°C.
