Dissolve the yeast and sugar in 100 ml warm water and mix.
Place the mixture in a planetary mixer together with the soy milk, oil, Veggò® – Aquafaba and salt, mix for a few minutes, add the sifted flour and continue mixing at medium speed for about 10 minutes.
Transfer the mixture to a glass bowl and cover with cling film and allow to rise for about an hour until the dough doubles in volume.
Once risen, knead the dough gently by hand and divide it into 6 equal parts.
On the work surface, with the help of flour, form small balls by turning the dough over on itself.
Place the balls on a baking tray covered with baking paper and leave them to rise for another 20 minutes covered with a damp cloth.
Preheat the oven to 190°C, brush the surfaces of the rolls with the liquid Veggò® – Aquafaba and scatter the poppy and sesame seeds.
When the oven is hot, bake the rolls for about 15 minutes at 190°C.
