Waffle

INGREDIENTS
- 170 ml soy vegetable drink
- 1 sachet of vanillin
- 120 ml of seed oil
- 160 g type1 flour
- A pinch of salt
- 50 g of Veggò® - Aquafaba
- A few drops of lemon juice
- 30 g icing sugar
PREPARATION METHOD
- In a bowl, mix the soy drink, vanillin and oil. In the same bowl, sift the flour and salt and mix with an electric whisk. Set the mixture aside.
- In a planetary, pour the Veggò® – Aquafaba , lemon juice and icing sugar and whip the mixture for 10 minutes at maximum speed.
- Add the Veggò® – Aquafaba to the previously prepared mixture with a spatula, stirring gently with movements from the bottom to the top, until the mixture is smooth and homogeneous.
- Pour a little less than a ladleful of the mixture into the waffle iron so that it covers the inside of the waffle iron. Close the waffle machine and bake for about 6-7 min.
TIPS & TRICKS
- To obtain more firm and compact structure, cool down Veggò® - Aquafaba in the fridge and add 4g of cream of tartar together with the other dry ingredients before whipping.
