Waffle

INGREDIENTS

  • 170 ml soy vegetable drink
  • 1 sachet of vanillin
  • 120 ml of seed oil
  • 160 g type1 flour
  • A pinch of salt
  • 50 g of Veggò® - Aquafaba
  • A few drops of lemon juice
  • 30 g icing sugar

PREPARATION METHOD

  • In a bowl, mix the soy drink, vanillin and oil. In the same bowl, sift the flour and salt and mix with an electric whisk. Set the mixture aside.
  • In a planetary, pour the Veggò® – Aquafaba , lemon juice and icing sugar and whip the mixture for 10 minutes at maximum speed.
  • Add the Veggò® – Aquafaba to the previously prepared mixture with a spatula, stirring gently with movements from the bottom to the top, until the mixture is smooth and homogeneous.
  • Pour a little less than a ladleful of the mixture into the waffle iron so that it covers the inside of the waffle iron. Close the waffle machine and bake for about 6-7 min.

TIPS & TRICKS

  • To obtain more firm and compact structure, cool down Veggò® - Aquafaba in the fridge and add 4g of cream of tartar together with the other dry ingredients before whipping.
