COCONUT BISCUITS

INGREDIENTS

  • 120 g Rapè Coconut
  • 70 g Maple syrup
  • 60 g Veggò® - Aquafaba
  • 60 g of dark chocolate
  • ½ teaspoon lemon juice
  • 1 pinch of salt
  • 1 pinch of vanilla powder

PREPARATION METHOD

  • Preheat oven to 170°C
  • Whip the Veggò® – Aquafaba in a planetary mixer with vanilla powder, salt and lemon juice for 10 minutes at maximum speed and set aside.
  • In a bowl mix together the coconut, maple syrup and gradually add whipped aquafaba. Veggò® – Aquafaba must be added gently with movements from bottom to top, until a homogeneous mixture is achieved.
  • Roll out the dough and create the desired biscuit shapes.
  • Transfer the biscuits to a baking tray lined with baking paper and, when hot, bake in the oven at 170°C for 15 min.

TIPS & TRICKS

  • Melt in bain-marie 60g of dark chocolate and pour it on each biscuit. Let it dry and serve it.
